Spring in the Kitchen Garden and the Orchard
Spring 2024 has been a mixed bag of weather, mostly cooler days, a little rain and the odd warm day here or there.
Our Spring crops are thriving in the greenhouse. It’s been a tricky time out in the kitchen garden, with little sunshine, cooler temperatures, and not much rain.
The Still Room kitchen is busy with local catering, preserving, pickling and creating new and interesting products for you.
Regenerative Farming
Research has shown that regeneratively managed crops contain higher levels of important nutrients such as vitamins, minerals, and antioxidants compared to conventionally managed crops.

The Still Room provides a locally grown and cooked product range, and soon a home delivery meal service to accompany our catering menu. We aim to provide healthy and nutritious food, our offering will extend to those with NDIS and Home Care Packages.
We grow everything here, using regenerative and biodynamic principles to ensure you get the most nourishing and delicious produce for your family.
Everything is grown in our hilltop orchard and kitchen garden. To meet demand, we also source produce from local, like-minded growers.
We also have pasture raised chickens, bees as well as Belted Galloway Cattle and Dorper Sheep who are hand raised on the rolling hills of the Southern Highlands, and a menagerie of other animals.

WHAT IS A STILL ROOM?
The Still Room is a distillery room found in most large houses throughout Europe dating back to at least 1710. The Still Room was a working room: part science lab, part infirmary and part kitchen.
Originally the use of the Still Room was restricted to preparing herbs and flowers from the kitchen garden and surrounding countryside. Here they were preserved for creating medicines and home cleaning products and processed into, what today, we call essential oils they were then infused or distilled or brewed as required to make cosmetics, ointments, soaps, furniture polish and home brewed beer or wine.
Eventually, The Still Room evolved into a room adjacent to the kitchen that was used for making jams, jellies, and home-brewed beverages, and later it became a storeroom for perishables such as cakes, biscuits and bread.
The Still Room acknowledges Aboriginal and Torres Strait Islander peoples as custodians of traditional land and waters of Australia.
