Having soaked my dried fruit for the fruit cakes and puddings in Pedro Ximénez – the sweet, dark, sticky sherry that has a hint of liquorice, fig and treacle about it – I know you are going to love them.
A flaming Christmas pudding is the ultimate end to a Christmas meal. Over the years I have formed and shaped this recipe drawing from the family archives, favourite chef’s recipes, and good old trial and error – the fruit is moist and sticky, and the pudding mystifyingly, meltingly light.
We only use Australian fruit and our puddings have lashings of brandy and sherry to preserve them, there are no other preservatives or artificial colourings used.
Our puddings are steamed in a traditional stoneware bowl which is yours to keep as our gift.
Our 2kg Pudding serves 16 people.
