Product Description

Having soaked my dried fruit for the fruit cakes and puddings in Pedro Ximénez – the sweet, dark, sticky sherry that has a hint of liquorice, fig and treacle about it – I know you are going to love them.

A flaming Christmas pudding is the ultimate end to a Christmas meal. Over the years I have formed and shaped this recipe drawing from the family archives, favourite chef's recipes, and good old trial and error - the fruit is moist and sticky, and the pudding mystifyingly, meltingly light.

We only use Australian fruit and our puddings have lashings of brandy and sherry to preserve them, there are no other preservatives or artificial colourings used.

Our puddings are steamed in a traditional stoneware bowl which is yours to keep as our gift.

Our 2kg Pudding serves 16 people.

 

STORAGE: Please store in the fridge.

REHEATING:  Remove pudding from refrigerator about 12 hours before it is to be reheated. Prepare for reheating the pudding about 3 hours before it is to be served.

Have large pot one-quarter full of boiling water, place a tea towel in the bottom of the pot and place a saucer upside down on the tea towel. Gently lower pudding basin into pot, (the water should come up two thirds of the basin) simmer for 1 to 2 hours.

To serve, remove from the pan or steamer, remove the foil and parchment paper lid, run a plastic knife around the edge of the pudding, put a plate on top, turn it upside down and give the basin a little tap to help unmould the pudding. Then remove the basin.

INGREDIENTS: Sultanas, currants, raisins, figs, glace cherries, citrus peel, prunes, dates, soft muscovado sugar, bread crumbs, beef suet, plain flour, almond meal, eggs, apples, cinnamon, nutmeg, cloves and the zest and juice of orange.
